Certain updates can take up to 1 hour to download and install, so we recommend you update your iPhone during a time where you do not need to use it. Apple requires iPhones to have at least 50% charge or to be plugged into a power outlet when updating them to ensure the phone does not run out of battery during the update. Also, we recommend doing updates when using a stable Wi-Fi connection as the file size is often quite large.
